Who wouldn’t want a yummy and super-easy Paleo snack? Well here ya go! The combination of the sweet dates and salty bacon is FANTASTIC!

Almond-Stuffed Bacon-Wrapped Dates
Ingredients:
Dates (Medjool taste best)
Raw Almonds
Bacon

Leave the bacon on the counter while you prepare the dates. It makes the bacon more ‘pliable’ to wrap the dates! Get a cookie sheet, line it with aluminum foil, then put one of those wire cooling racks on the cookie sheet. Take the seeds out of the dates if they’re still there. Put an almond or two in each date. Wrap each date with a third of a piece of bacon. You can use toothpicks to keep the bacon in place if necessary, but I’ve never taken the time to do that! Put the dates on the cookie sheet. Put them in the oven at 400 degrees for about 10-15 minutes. That’s it! Eat them hot, warm, or cold. I make a big batch of them and keep them in the fridge when I need a treat. (By the way, the picture is from Paleo Comfort Foods…the end product actually looks just like the picture!)
